They’ve got different strengths - the milder ones are still hot, but pack a lot of flavour

Always happy with good old Sriracha. Use it just for foods though. Cholula for tortilla chips, though it's a bit vinegary.

It's about as popular as you can get. My stomach also agrees with it, even in bigger doses. I'm also a big fan of Sriracha, available pretty much anywhere now. I like its tang rather than the raw, searing heat of some of the Yank chilli sauces. I also like Lao Gan Ma, but not sure how available it is outside China. I've never seen it in Sainsbury's (unlike Sriracha). There is an American diner near me that does great burgers, one that it calls the 'Sinophile', which is honestly one of the best flavour combinations I've ever had: (bottom to top, in order) fresh doughy bun, burger sauce, coleslaw, quality beef patty, slice of cheese, crispy bacon, Lao Gan Ma, bun. I keep trying to make it at home but can't quite replicate it as my homemade burgers fall apart a bit.
