Haha do like a go at making my own. I'm always pissed that it's never EVER like the ones you have in the restaurants. Even though they say they are. Why is that? Can't be that fucking hard. You should try Rick Stein's India - genuinely fantastic curries in there. I did this lot: Pau Bhaji Tibetan Noodle Soup Madras Fish Curry (with Red Snapper) Butter Chicken (made with Quorn fillets) Prawn Molee Chana Masala Tarka Dal Fuck knows why the tarka dal was so rancid, I reckon I made a mistake somewhere. The menu looks epic. What were the carbs?

Even though they say they are. Why is that? Can't be that fucking hard. I'm guessing it's because Rick Stein's recipes are for Indian food and not BIR (British Indian Restaurant) curries. Different style. BIR curries use a base gravy which takes the Indian food to another level - the one you're after. In Grant's view, that's obviously a lower level, but many prefer the BIR style. There are various YouTube vids on how to make the base gravy. Once you've got it, you'll get that restaurant taste.

I remember being in California and coming across a curry house and got a bit excited at trying out an American style curry. First thing was the smell coming up to the place. Just wasn't that rich smell you get from a UK curry house. Smelt more like a jar of Patak's. Second thing was the curry... Disappointing on all levels - curries, breads and poppadoms particularly. Wasn't just one curry house either. Tried a few and they were all the same.
